Daylesford's holistic approach begins with sustainable, organic farming practices which encourage biodiversity and secure the farm’s future. Inside the farm shop as you would expect, are local and organic foods, recyclable packaging and reusable bags. A closer look reveals rainwater harvesters, used to water the garden and livestock, a woodchip burner to provide hot water in the shop, and a wood-fired oven and grill fuelled by timber managed on the farm. The oven’s heat is not wasted but captured in a heat exchanger on the roof, creating hot water for the kitchens. The desire to communicate the message is of primary importance. Daylesford hosts student interns, and tours and courses for schools (teachers and pupils) and community groups which make use of the excellent facilities, including a demonstration kitchen garden and cookery school.
