Shrove Tuesday Pancakes
100g organic plain flour
2 organic Brown Nik eggs
salt and pepper
200ml organic whole milk
50g organic unsalted butter
1 tbsp (unflavoured) oil
1. In a mixing bowl, make a well in the flour and crack eggs in. Season with four pinches of salt and a pinch of pepper. Whisk eggs, incorporating flour little by little. Gradually add milk, whisking all the time. Melt the butter and whisk in - this gives a good buttery flavour and prevents sticking.
2. Heat a teaspoon of oil in the frying pan, medium heat. The oil must be hot enough to sear and cook the pancakes. Too hot, and they will burn, but not hot enough and they'll be beige and cardboard-like. Practice makes perfect...
3. Swirl oil around the pan, add just enough batter so when swirled it just covers the surface. Cook for 20 seconds, flip the pancake and cook for a further 15-20 seconds.
