Three fruit marmalade


prep time: 15 mins

cooking time: 90 mins plus

season: Winter

 

ingredients
5 Seville oranges
5 lemons
5 pink grapefruits
12 pints of water
11lbs of sugar
 

1. Scrub the fruit and cook in a covered pan, in water for about 90 minutes until the skins are soft and the liquid is reduced.

 
2. 
Cool and half the fruits, remove the flesh and pips and tie in a muslin bag, to bob about in the mixture. Cut the halfs into strips and return to the pan adding the sugar and boil at 120-122ºC until the setting point is reached. 


3. Remove the muslin bag; allow to cool for a few minutes before pouring into warm sterilised jars and seal. Store in a dark cool place. Once open, keep refrigerated.
