Traditionally cured bacon
The bacon is cured traditionally, using meat rubbed by hand with sea salt and a little cane sugar, then cured and smoked over fragrant local Shropshire oak woodchips, for a light caramel flavour. The result: real old-fashioned rashers of bacon.
