Working throughout the night in the organic bakery at Daylesford, our team produces bread, warm and fresh from the oven each day. We have the advantage of our own organic flour, milled for us in traditional style by a local organic miller, and produced from our own organic crops on the estate. We have master bakers and patissiers who produce a truly astonishing range of breads, pastries, tarts, cakes and biscuits. These range from our award-winning sourdough to multi-grains, ciabattas, focaccias, and croissants - and precious English classics like apple crumble, flapjacks, carrot cakes and Madeira cakes to festive specialities like Christmas cakes, Simnel cakes and hot cross buns. Our bakers are delighted to discuss aspects of bread-making and special orders - for example gluten-free - with customers.
creamery
Our Friesians are raised organically on the unpolluted green pastures at Daylesford; their milk is simply delicious. The milking parlour is situated directly beside the Creamery, so the milk can be channelled fresh to the Dairy and Creamery. Here, we make our award-winning cheeses, by hand, using traditional methods. We produce what we believe to be exceptional full milk - also skimmed, and semi-skimmed varieties - and a range of yoghurts and cream. As with all our animals, we take the welfare of our milking herd to heart: contented cows and stress-free calves are the result.
garden
We are striving for the renaissance of the English kitchen garden. We grow traditional heritage varieties of vegetables, using natural alternatives to pesticides and traditional methods: the results are mouth-watering. Season by season, we produce what we believe to be some of our tastiest national assets: purple sprouting broccoli; English asparagus; fresh raspberries and gooseberries; and winter treasures like parsnips and pumpkins. We aim to expand the culinary repertoire with courgette flowers, chicories, wonderful selections of heritage tomatoes and potato varieties and much, much more.

We have a team of chefs keen to obtain the maximum potential from our organic produce, immediately it comes into season. This may mean that the abundance of heritage tomatoes in August gives them an opportunity to produce our now-famous fresh tomato sauce for pasta, tomato chutney, organic tomato soup, jams, pickles, chutneys, and much, much more – traditional English preserves are just one of our specialities. We have won organic awards for our soups; our sauces and ready to eat meals all share the same reliance on fresh, seasonal ingredients.

Just as we rear our animals throughout their lives with the utmost care for their welfare and contentment, so we ensure that when it comes to slaughter, the process is as compassionate and stress-free as possible.
